Bahan :
- 100 gr kentang
- 60 gr tepung tapioka
- 60 gr air
- 260 gr air
- 20 gr gula
- 6 gr garam
- 30 gr minyak
- 200 gr tepung beras
- 120 gr tepung tapioka
- 60 gr pea protein powder
- 2 gr ragi instan
Cara membuat :
- kupas kentang, iris slice, kukus dengan api besar 20 menit
- angkat kentang, gunakan saringan santan untuk meneteskan airnya
- hancurkan kentang dengan saringan santan
- siapakan 60 gr tepung tapioka, campurkan dengan air 60 gr, aduk
- siapkan panci, masukkan 260 gr air, 20 gr gula, 6 gr garam, 30 gr minyak, ddidihkan dengan api kecil
- matikan api, masukkan campuran tepung tapioka
- aduk-aduk hingga membentuk seperti lem
- masukkan 100 gr kentang tumbuk, aduk, dinginkan
- masukkan 200 gr tepung beras dalam mangkok besar + 120 gr tepung tapioka
- masukkan 60 gr pea protein powder
- masukkan 2 gr ragi instan, aduk dengan wisk
- masukkan campuran lem tapioka yang telah dibuat, adon
- diamkan selama 15 menit
- adon kembali sampai berbentuk kalis
- apply a small amount of oil on the mat
- fllaten the dough
- press fingers in to the dough to create dimples
- Fold the dough to cover the dimples
- cover with the large mixing bowl
- diamkan selama 20 menit
- Fllaten the dough

- devide the dough in to 3 equal portions
- flatten, fold, and shape in to round ball
- cover and let rest for 10 minutes
- sprinkle rice flour on the mat
- take one portion of dough, flatten to degas
- shape the dough into a rectangle with 1 cm thick and 6 cm wide
- roll up th e dough
- put into oil - coated baking pan (20cm x 10cm x 10cm)
- repeat the remaining dough
- cover the baking pan
- proove at the room temparature (21 C) for 30 minutes
(until the dough is 80% full of the pan in volume)
- preheat the oven to 190 C
- seal all a round
- place in the oven an bake for 40 minutes
- remove the foil. continue to bake for 20 minutes
- turn off the oven. Leave the oven door slightly open
